Preparing lunch is hard for me. I want my son and I to eat healthy foods, but I don't want to spend a lot of time getting it ready. After being a SAHM for twenty months now, I am finally figuring out several easy lunches to prepare that make us both happy. My favorite lunches are those where we can either eat the same thing or at least use the same ingredients. This is one of our tried-and-true favorites. If we're running short on time, I scramble some eggs, slice some grapes, and toast an English muffin. Five minutes... and I am done! He eats the eggs and grapes and I make my English muffin sandwich. (Who says eggs are only a breakfast food? We eat them for all meals as well as some snacks around here!)
