When I try to figure out what I want to have for dinner during the week, my main problem is that we end up having the same things week after week. I have just recently started really trying to cook a lot more. (Mainly due to the fact that I'm about to have our second boy, and when my boys get older, I have a feeling that are going to want to eat and I don't want them sneaking off to their friends' houses for dinner because their mama doesn't know how to cook.)
Anyway..... I have found that I do not loathe cooking nearly as much as I used to, I sometimes even enjoy it a tiny bit (don't tell anyone) but the planning is still challenging to me. I have found that lots of times I will find something that we like, but then I forget about it and we're back to Chicken Casserole and Barbecue Chicken Pizza (we like our chicken around here) for the umpteenth time that month.
So I've started keeping a list that I keep posted on our fridge and every time I make something new that is actuallly good, (which, unfortunately, does not happen as often as I would like) I add it to my list. When I sit down to plan out my meals on the weekend, I just look over the list, and pick a couple of things to make that week, and I'm done. Simple!
