All you cooking aficionados out there probably know this, but I did not...Red peppers are not currently in season and they are extrememly expensive right now. I was at Kroger the other day and my ONE red bell pepper rang up for $2.84. Yes---two-dollars-and-eighty-four-cents. I thought there was a mistake, but the cashier, who I guess happens to actually be a cooking aficionado, told me that yes, that was the correct price. I told him he could keep his red pepper, he understood, and made the following suggestion, which was simply brilliant.
He suggested I buy a bag of frozen peppers and onions. The bag cost $1.34, contains red, yellow, and green peppers and onions. He said to just pick out what I need and stick the unused portion back in the freezer. He even ran and picked me out a bag. This saved me a good bit of money. There are some recipes that are just not the same without peppers, such as this one, which is what I was planning on making that night. His suggestion works beautifully and I would highly recommend it. Not only is it cheap, it is also easy, since the chopping is done for you.
